- 1Pat dry the lamb chops and discard any shards or bone fragments.
- 2Mix all of the ingredients together in a small jug or bowl.
- 3Arrange the lamb chops in a large baking dish or on a large plate and pour the marinade over them, rubbing it into the meat.
- 4Cover and marinate for half an hour or overnight in the refrigerator, turning the chops from time to time.
- 5Let the lamb chops sit at room temperature for 30 minutes before cooking.
- 6Heat oil in a pan over high heat until just starting to smoke.
- 7Fry or grill the lamb in 2 batches for 3-4 minutes on each side, depending on thickness, until done to your liking.
- 8Let rest for 5 minutes before serving.
- 9Sprinkle with a little extra dried oregano and a little extra lemon juice, if desired.
