Eating Healthy Today on Instagram: "Creamy Garlic Parmesan Chicken with Mash & Greens 🍗🥔🥬✨

Golden pan-seared chicken is coated in a creamy garlic-Parmesan sauce and served over smooth Dijon mash with lemony garlic green beans. 🤤

🛒 Ingredients
Serves 1
For the mash:
• 1 baking potato
• Olive oil and salt
• 1 tbsp butter
• 2 tbsp milk
• 1 tsp Dijon mustard
• Black pepper
For the chicken:
• 1 chicken breast, scored
• Paprika
• Garlic powder
• Onion powder
• Salt and black pepper
• Olive oil
For the sauce:
• 1/2 shallot, finely diced
• 1 garlic clove, minced
• 100ml chicken bone broth
• 50ml crème fraîche
• 20g grated Parmesan
• 1 tsp honey
• Fresh parsley and chives
• Squeeze of lemon juice
• Black pepper
For the green beans:
• Green beans, trimmed
• Olive oil
• 1 garlic clove, minced
• Zest and juice of 1/2 lemon
• Salt and black pepper

👩‍🍳 Directions
1. Rub the potato with olive oil and salt, then prick it with a fork. Air-fry uncovered at 200°C/400°F for 50–60 minutes, until tender.
2. Scoop out the flesh and mash with the butter, milk, Dijon mustard, and black pepper. Pass it through a sieve first for an extra-smooth texture, if desired.
3. Season the chicken with paprika, garlic powder, onion powder, salt, pepper, and olive oil.
4. Cook scored-side down in a hot pan for 5–6 minutes until golden. Flip and continue cooking until it reaches 74°C/165°F internally. Remove from the pan.
5. Cook the shallot in the same pan for 2–3 minutes, then add the garlic and cook for 1 minute.
6. Pour in the broth and allow it to reduce slightly. Stir in the crème fraîche, Parmesan, honey, herbs, lemon juice, and black pepper.
7. Simmer gently until thickened, then return the chicken and spoon the sauce over it.
8. Sauté the green beans in olive oil until tender and lightly charred. Add the garlic, lemon zest, lemon juice, salt, and pepper.
9. Serve the sliced chicken over the mash with the sauce and green beans.
