Ingredients:
Beef, sliced thinly
Fresh wide rice noodles
Bean sprouts
Onion
Garlic chives
Spring onion
Oil

Beef marinade:
½ tsp baking soda
1 tbsp cooking wine
A little white pepper
1 tsp sugar
½ tbsp soy sauce
½ tbsp corn starch
A little oil

Sauce:
1 tbsp soy sauce
1 tsp dark soy sauce
1 tsp oyster sauce
1 tsp sugar
1 tsp chicken powder

Method:
1 Slice the beef thinly, then tap it a few times with the back of your knife to break down the fibres.

2 Add baking soda and cooking wine. Massage for about 1 minute until the beef becomes sticky.

3 Add white pepper, sugar, soy sauce, and corn starch. Mix well, then add a little oil to stop the beef slices from sticking together.

4 Mix all the sauce ingredients in a bowl and set aside.

5 Separate the fresh rice noodles by hand before cooking. If they are stuck together now, they won’t separate properly in the wok later.

6 Heat oil in a wok, add the beef, and stir-fry for about 1 minute. Remove and set aside.

7 Heat the wok until smoking, then add a little cold oil. Add the rice noodles. Toss the wok 2–3 times without stirring too much.

8 Add onion, bean sprouts, spring onion, and garlic chives. Stir-fry briefly, then add the beef back in.

9 Pour the sauce evenly over the noodles and toss until everything is evenly coated.

10 Done. Restaurant-style beef chow fun at home.

  • The beef is sliced thinly and tapped with the back of a knife to break down the fibres before marinating.
  • The beef marinade uses baking soda, cooking wine, white pepper, sugar, soy sauce, corn starch, and a little oil.
  • The sauce is mixed separately with soy sauce, dark soy sauce, oyster sauce, sugar, and chicken powder.
  • Fresh wide rice noodles should be separated by hand before cooking so they won’t clump in the wok.
  • The beef is stir-fried in hot oil for about 1 minute, then removed and set aside.
  • The wok should be heated until smoking before adding a little cold oil and the noodles.
  • The noodles are tossed only 2–3 times at first rather than stirred too much.
  • Onion, bean sprouts, spring onion, and garlic chives are added briefly before the beef is returned to the wok.
  • The sauce is poured evenly over the noodles and tossed until everything is coated.
