Ingredients

  • 2-3 tbsp mashed sweet potato
  • 1 serving shredded cheddar cheese
  • 1/2 small avocado mashed
  • 1 egg
  • salt
  • pepper
  • everything bagel seasoning optional
  • chile lime seasoning optional

Method

  1. Step 1

    Preheat a mini waffle maker.

  2. Step 2

    Add half a serving of cheese, 2-3 tbsp mashed sweet potato, and another half serving of cheese to the waffle maker.

  3. Step 3

    If starting with raw sweet potatoes, bake 4 medium sweet potatoes at 350°F for 70 to 80 minutes, then cool slightly and mash the insides.

  4. Step 4

    Close the waffle maker and cook until the waffle is crispy on both sides.

  5. Step 5

    While the waffle cooks, mash half an avocado with a little salt and pepper and a touch of lime juice, or use guacamole.

  6. Step 6

    Top the waffle with an egg and seasonings like everything bagel seasoning and chile lime seasoning.
