- 1Preheat the oven to 180°C, 350°F.
- 2Line a baking tray with baking paper and lightly spray it with oil.
- 3Blend the cottage cheese, egg and garlic powder until smooth.
- 4Fold through the almond flour and baking powder until combined.
- 5Divide the mixture into 4 even portions on the tray and flatten them into thin round discs roughly 10–12cm, 4–5in wide.
- 6Bake for 15–18 minutes until golden brown.
- 7Let the thins cool slightly, then fill them with sandwich fillings.
