Serves 1 batch, makes 4 sandwich thins

Ingredients

  • 1 cup cottage cheese 225g, 8oz
  • 1 egg large
  • 1/4 tsp garlic powder
  • 1 cup almond flour 100g, 3.5oz
  • 1/2 tsp baking powder
  • everything bagel seasoning optional

Method

  1. Step 1

    Preheat the oven to 180°C, 350°F.

  2. Step 2

    Line a baking tray with baking paper and lightly spray it with oil.

  3. Step 3

    Blend the cottage cheese, egg and garlic powder until smooth.

  4. Step 4

    Fold through the almond flour and baking powder until combined.

  5. Step 5

    Divide the mixture into 4 even portions on the tray and flatten them into thin round discs roughly 10–12cm, 4–5in wide.

  6. Step 6

    Bake for 15–18 minutes until golden brown.

  7. Step 7

    Let the thins cool slightly, then fill them with sandwich fillings.
