 Ingredients

* **4** thick-cut, bone-in pork chops
* **2 large** yellow onions, thinly sliced

 Instructions

2. **Season & Prep:** Pat the pork chops dry and season both sides generously with salt, pepper, and garlic.
3. **Layer the Slow Cooker:** Place the caramelized onions into the bottom of the slow cooker. Arrange the seasoned pork chops in a layer right on top of the onions.
4. **Add the Liquid:** Whisk together the beef broth, Worcestershire sauce, minced garlic, and dried thyme. Pour the mixture over the pork chops.
5. **Slow Cook:** Cover and cook on **LOW for 5–6 hours** (or HIGH for 3 hours) until the pork chops are tender and cooked through.
6. **Cheese Layer:** About 15 minutes before serving, switch the slow cooker to warm and generously pile the shredded cheese over each pork chop. Cover with the lid for a few minutes until the cheese is completely melted and gooey.
7. **Serve:** Garnish with lots of fresh chopped parsley and serve hot with a side of mashed potatoes to soak up that incredible onion gravy!
