- 1Mix the chicken marinade ingredients and marinate for at least 30 minutes, preferably 2 to 8 hours.
- 2Thread the chicken onto skewers or cook it as cubes.
- 3Cook the chicken on a grill pan, BBQ, or skillet over medium-high heat for about 10 to 12 minutes total, turning until golden and slightly charred.
- 4Mix the garlic sauce ingredients and let it sit for 10 to 15 minutes so the garlic softens.
- 5Add the rice or quinoa base to the bowl.
- 6Layer the vegetables on top of the base.
- 7Add the hot chicken souvlaki.
- 8Drizzle the garlic sauce generously over the bowl.
- 9Finish with olive oil, oregano, and a squeeze of lemon.
